Desi style spicy egg fried rice recipe.
Recipe
Ingredients- 2 cups cooked rice
- 3 eggs
- 2 tbsp oil
- 1½ tbsp finely chopped garlic(5 cloves approx.)
- 1 tsp finely chopped ginger
- 1 tsp red chili flakes
- 2 tsp soy sauce
- 2 Tbsp hot sauce
- 3 Tbsp tomato sauce or ketchup
- 1 tsp white vinegar
- Salt and pepper
- 1 Tbsp butter
- 1 cup finely chopped vegetables(cabbage, carrot, bell peppers )
- 1 Tbsp chopped green onions
- 1 tsp chopped cilantro/coriander leaves.
- In a bowl, beat 3 eggs until frothy. In a pan, Heat 1 tsp oil and add beaten eggs over medium heat. As eggs begin to set, stir gently with a spatula. Continue cooking until no liquid egg remains. Turn off the heat, sprinkle pinch of salt and pepper. Keep the scrambled eggs aside.
- In a wok, heat 2 tbsp oil over medium heat. Add 1½ Tbsp of finely chopped garlic, 1tsp finely chopped ginger, 1 tsp red chili flakes. Saute for 2 minutes. Add 2 tsp soy sauce, 2 Tbsp hot sauce, 3 Tbsp tomato sauce or ketchup and 1 tsp white vinegar. Stir until it slightly thickens. Turn off heat and transfer the sauce into a bowl and keep it aside.
- Heat, 1Tbsp butter over medium high heat in the wok. Add finely chopped vegetables. Saute for 4 minutes. Decrease the heat to low and add the prepared sauce. Stir it well.
- Add 2 cups of cooked rice and scrambled eggs. Give it a mix and turn off the heat.
- Add salt and pepper as required.
- Garnish with chopped green onions and cilantro.
