Ingredients
For yeast
- 2 tsp dry yeast
- 2 tsp sugar
- ½ cup warm water
- 2 ½ cup all purpose flour/ maida
- 1 tsp garlic powder or finely chopped garlic
- ½ tsp oregano
- ½ tsp ground pepper powder (optional)
- 1 tsp salt
- ½ cup milk
- 1 tsp oil
- 1 tsp cornmeal or semolina
- 1 cup shredded mozzarella cheese
- ¼ tsp salt
- 2 tbsp melted unsalted butter
- 2 tbsp finely chopped garlic (10 garlic cloves)
- 2 tsp chopped cilantro or parsley leaves
- 1 tsp chilli flakes
- ½ tsp oregano
Preparation
- For yeast: Combine sugar, warm water, and yeast in a bowl, allowing it to rest for 10 minutes.
- Dough: In a large bowl, combine flour, garlic powder, oregano, pepper, and salt. Create a well in the center and pour in the yeast mixture, milk, and oil. Stir everything together using a wooden spoon until fully combined. Transfer the dough onto a floured surface and knead for approximately 5 minutes until a smooth dough is achieved. If using a stand mixer, beat the dough for 3 minutes on medium speed with the dough hook attachment. Place the dough in an oiled bowl, ensuring it is coated with oil as well.
- Securely cover the bowl with plastic wrap or a plate, and let it sit at room temperature until it has doubled in size, approximately 1 hour and 30 minutes.
- Preheat the oven to 450℉/230℃. Line a baking sheet with parchment paper and sprinkle cornmeal or semolina on it. Set aside.
- Divide the dough into two equal halves, lightly knead each portion, and form smooth balls. Allow them to rest for 15 minutes.
- In melted unsalted butter, add finely chopped garlic, chopped cilantro/parsley leaves, chili flakes, salt, and oregano. Set this butter mixture aside.
- Roll out one of the dough balls into a 10-inch circle and place it on the prepared baking sheet.
- Brush the rolled-out dough with the melted garlic butter mixture.
- Place ½ cup of mozzarella cheese on one half of the dough.
- Fold and enclose the dough, pressing to seal it. Slice the dough at 1-inch intervals. Brush the top with the melted garlic butter.
- Bake in the preheated oven for 15 to 17 minutes or until golden brown. Allow it to cool slightly, then pull it apart into breadsticks and serve with marinara sauce or tomato sauce.
- Repeat the process with the remaining dough and ingredients.
- Note: This recipe yields 2 garlic bread loaves.
