Best Banana Bread Recipe

  • 1/2 cup Coconut/sunflower/canola oil
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 2 eggs, at room temperature (or 1/2 cup yogurt + 1 tsp white vinegar)
  • 3 ripe bananas, mashed
  • 1/2 tsp vanilla extract
  • 1 1/2 cups all-purpose flour (maida)
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon powder
  • A pinch of nutmeg powder
  • 1/4 cup chopped walnuts

Preparation

  • Preheat the oven to 350°F (180°C). Grease and flour a loaf pan or line it with parchment paper.
  • In a mixing bowl, combine the oil, brown sugar, and white sugar. Beat until well combined.
  • Add the eggs (or yogurt + vinegar mixture) and vanilla extract to the bowl. Mix until smooth.
  • Fold in the mashed bananas until incorporated.
  • In a separate bowl, sift together the all-purpose flour, baking soda, salt, cinnamon powder, and nutmeg powder.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  • Gently fold in the chopped walnuts.
  • Pour the batter into the prepared loaf pan and spread it evenly.
  • Bake in the preheated oven for approximately 53 minutes, or until a toothpick inserted into the center comes out clean.
  • Once done, remove from the oven and allow the banana bread to cool completely in the pan.
