Requirements
Ingredients
- 1 cup Orange Juice
- 1 cup mixed dried fruits and nuts like raisins, figs, almonds and cashew nuts.
- ½ cup sugar
- ½ cup yogurt
- 2 tbsp (30g) room temperature butter
- 1 tsp vanilla extract
- ½ tsp vinegar
- 1½ cup all purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
Directions
Preheat oven to 350℉(180℃). Line 9 by 5 inch loaf pan with parchment paper, leaving overhanging on both sides.
In a sauce pan, heat the orange juice, dry fruits and nuts over medium heat. Bring it to boil, reduce the heat and simmer about 3 to 5 minutes stirring occasionally until thickened and fruit is soft. Turn off the heat and stir in sugar, yogurt and butter. Add vinegar and vanilla extract and let it cool.
In a large bowl, whisk flour, baking powder, baking soda and salt. Fold the wet ingredients into the dry ingredients. Do not over mix.
Scrape the batter into the loaf pan and bake until a toothpick inserted into center of the loaf comes out clean, 45 to 50 minutes.
Remove from oven, let it cool for 30minutes in loaf pan and then transfer the cake onto a cooling rack, wait for 1 hour and then slice it. Enjoy!
