Ingredients
- ¼ cup coconut oil
- 3 Tbsp brown sugar
- ½ tsp vanilla extract
- ½ cup all purpose flour
- ½ tsp baking soda
- ½ tsp ground cinnamon
- ¼ tsp salt
- 1 cup rolled oats
- 2 ripe bananas
- ¼ cup raisins
- 2 Tbsp toasted coconut flakes
- 1 cup vegan chocolate chips.
Directions
Preheat oven to 375℉ or 190℃.
In a large bowl, mix well the coconut oil, brown sugar and vanilla extract
until smooth texture is formed. In another bowl, combine the flour, baking
soda, cinnamon, salt and stir them into the oil mixture. Add rolled oats
and give it a stir. Add mashed bananas and raisins. Combine just until
everything is incorporated.
Drop them on a cookie sheet with a round spoon and bake them in a
preheated oven for 10 to 12 minutes.
let them cool completely. Melt chocolate chips. Dip one side of each
cookie into melted chocolate. Sprinkle with toasted coconut flakes. Enjoy!
